  • 1 cup vegetable oil

  • 3 tsp vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

Zucchini Bread Instructions

This recipe will make 2 loaf pans that are 8×4 inches each.

Preheat your oven to 165 degrees C or 325 degrees F.

Grease and flour your loaf pans

In a small bowl, sift flour, salt, baking powder, soda, and cinnamon and set aside.

In a large bowl crack in eggs and beat until smooth.

Add oil, vanilla and sugar until you have a nice consistency.

Add in your dry sifted ingredients to the creamed mixture.

Beat well until all the ingredients are well combined and you have formed a batter.

Next, pour your batter into your greased loaf pans.

Pop into the preheated oven for 40-60 minutes and bake.

You will know your bread is ready when you insert a toothpick in the center and it comes out clean.

Remove from the oven and leave in pan on rack for 20 minutes.

The final step is to remove bread from the pan once it is completely cool.

If it needs a bit of assistance, use a sharp knife gently around the edges of the loaf pan to help it out.
