Apple Date Cake With Coconut Topping Ingredients

This delicious cake is stuffed with apples and dates, then topped with sweet brown sugar and coconut crumble. So, let’s take a look at what you are going to need on your shopping list.

  • 2 large apples, grated
  • 1 cup dried or fresh dates, chopped
  • 1 tsp baking soda
  • 1/2 cup boiling water
  • 4.5oz (127g) butter, melted
  • 1 cup of sugar
  • 1 egg
  • 1 teaspoon of vanilla
  • 1 1/2 cup plain flour
  • 1 teaspoon baking powder
  • 1 Tablespoon icing sugar to serve

Topping Ingredients

  • 2 oz (57g) butter, melted
  • 1/2 cup brown sugar
  • 2 Tablespoons milk
  • 1 cup shredded coconut (Vanya used half coconut chips)
