Wendy is back today and this time she’s bringing us one sweet treat. Her no-bake Apricot Fudge Slice Recipe is it and a bit and you won’t be able to wait to make it.

You only need a handful of ingredients and it is finished with a  delicious zesty lemon icing top. One thing’s for sure, you will be head over heels for this old-fashioned treat!

Apricot Fudge Slice Ingredients

  • 125g (4.4oz) butter
  • ½ cup brown sugar
  • ½ tin sweetened condensed milk
  • 1 cup chopped dry apricots
  • 1 x 250g (8.8oz) Marie Biscuits, crushed (any plain sweet digestive biscuits)

Lemon Icing

  • 100g (3.5oz) butter
  • 1 ½ cups icing sugar
  • 3 – 4 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • ¼ cup desiccated coconut

Apricot Fudge Slice Instructions

Heat butter, brown sugar, and condensed milk until the butter has melted.

Do not boil. Add chopped apricots and crushed biscuits.

Mix well. Press into a greased and lined 20cm square cake pan.

Step 2 – Making Icing:

Beat butter until pale and creamy. Add icing sugar, lemon juice and zest.

Mix well. Spread over slice and sprinkle with coconut.

Set in refrigerator. Cut into squares.
