You are only going to need a few ingredients and just look at those photos. That delicious zesty lemon icing top is just waiting for you to bite into it! This is perfect with a cuppa and an easy sweet treat!

Apricot Fudge Slice Ingredients
- 125g (4.4oz) butter
- ½ cup brown sugar
- ½ tin sweetened condensed milk
- 1 cup chopped dry apricots
- 1 x 250g (8.8oz) Marie Biscuits, crushed (any plain sweet digestive biscuits)

- 100g (3.5oz) butter
- 1 ½ cups icing sugar
- 3 – 4 tablespoons lemon juice
- 1 teaspoon lemon zest
- ¼ cup desiccated coconut
Apricot Fudge Slice Instructions
Heat butter, brown sugar and condensed milk until the butter has melted. Do not boil. Add chopped apricots and crushed biscuits. Mix well. Press into a greased and lined 20cm square cake pan.
To Make Icing: Beat butter until pale and creamy. Add icing sugar, lemon juice and zest. Mix well. Spread over slice and sprinkle with coconut. Set in refrigerator. Cut into squares.
