  • 1/2 cup cornflour
  • 1/2 cup custard powder
  • 1 tsp cream of tarter
  • 1/2 tsp carb soda
  • 1 tsp plain flour
  • 4 eggs
  • 3/4 cup caster sugar

Pre-heat oven to moderate temperature – about 160C/325F

Beat your egg whites until they are very stiff, then gradually add sugar a little at a time.
Next, add in egg yolks. Fold remaining dry ingredients (which have been sifted 3 times) little by little. Now divide equally between 2 – 8″ tins which have been well greased and floured.

Bake in a moderate oven for 20 minutes, and then turn them out straight away onto a wire rack and leave to cool.

On the bottom sponge, spread with whatever takes your fancy – whipped cream and strawberries is a great choice.
