Our WHOot Contributor Dave Hood is back to share another of his legendary recipes with us. Today you’ll get to roadtest his Cheesy Chicken and Broccoli Casserole. This dish is not only utterly delicious but it is so incredibly easy too.

  • 2 large chicken breasts
  • 2 cans cream of chicken soup
  • a medium-size bowl of broccoli
  • olive oil
  • cheddar cheese
  • salt and pepper for seasoning

How To Make Cheesy Chicken And Broccoli Casserole

Pop 2 large chicken breasts into water. Boil chicken 18-20 minutes. Remove from the stove and allow it to cool.

Cut chicken into cubes or shred if you prefer.

Blanch broccoli in boiling water for 3 minutes.

Remove from water and set aside in a bowl.

In a casserole dish, drizzle some olive oil across the base of your dish. Using a baking brush or similar ensure an even coat. Be sure to extend up the sides of the dish and cover it well.

Lay the chicken on the base of the casserole dish. Layer the broccoli over the chicken.

Next, add 2 cans of cream of chicken soup (284ml ea) over the top of chicken and broccoli until it is fully covered.

Season with salt and ground black pepper.

Sprinkle grated cheese over the top. Dave uses triple cheddar cheese although you can use whatever you like.

Bake in a pre-heated oven at 350F/180C and cook for 25 minutes.
