A friend used this exact recipe to whip up a batch recently and it was devoured in what seemed like moments! The chocolate top gives way to cherry and coconut filling which melts in your mouth.
Cherry Ripe Slice No Bake Ingredients
- 250g (8oz) packet plain chocolate biscuits/cookies
- 125g (4oz) butter, melted
- 4 cups desiccated coconut
- 400g (14oz) can sweetened condensed milk
- 200g (7oz) packets red glace cherries, quartered
- 2 drops Rose pink food coloring
- 250 grams (8oz) semi-sweet dark melted chocolate
- 125 grams (4oz) of White Chocolate, melted

Cherry Ripe Slice No Bake Instructions
Crush plain chocolate biscuits/cookies in a food processor.
In a bowl add melted butter and mix with a wooden spoon until you have a mixture that resembles wet sand.
Grease a shallow slice tin and line with baking paper. Ensure you allow for some overhang.
Spread cookie mixture into the baking pan. Use the base of a glass to flatten out the mixture until nice and even and then pop into the fridge to set.
Into a large bowl add your desiccated coconut, sweetened condensed milk, quartered cherries, melted white chocolate and mix until well combined.
Add a couple of drops of rose pink food coloring. If you want your mixture pinker, add extra until the desired color is achieved.
Tansfer the mixture onto the base of the cookie mixture to create a new layer. Use the back of your spoon to flatten and spread until it is nice and compact.
The final step is to melt your semi sweet chocolate and spread over the top of the filling. Smooth it out with a spatula until it covers the layer.
Place back in the fridge for an hour until fully set. Remove and slice evenly into squares.
