This Coca-Cola Chocolate Cake is a favorite of Wendy’s from Wendy’s Kitchen Table and with very good reason.
She’s shared lots of fabulous recipes with us and this one might just be her best! Wendy says that what sets this cake apart from others is the unique flavor and that it is incredibly moist.

Coca-Cola Chocolate Cake Ingredients
Whilst it might seem like a long ingredient list, many are simple pantry staples that you may already have in your cupboard. Here’s what you are going to need.
- 1 ½ cups marshmallows
- ½ cup light olive oil
- ½ cup butter
- 4 tbs cocoa powder
- 1 cup Coca-Cola
- 1 tsp bicarbonate soda
- 2 eggs
- 1 ¼ cups sugar
- 1 tsp vanilla
- ½ cup buttermilk
- 2 cups self-raising flour

- 2 cups icing sugar, sifted
- 3 Tbs cocoa powder sifted
- 1/4 cup butter, softened
- Coca-Cola to mix to desired consistency

Coca-Cola Chocolate Cake Instructions
Preheat oven to 180C/350F or 160C/ 325F in fan-forced/convection oven.
Grease and line a large round springform pan with parchment paper.
Place marshmallows, oil, butter, cocoa, coca-cola in a large saucepan. Heat and stir until melted.
Mix in the bicarbonate of soda. Set aside to cool slightly.
In a bowl blend self-raising flour, sugar, eggs vanilla and buttermilk using a hand-held electric beater.
Add chocolate mixture and mix together until combined.
Pour into prepared pan. Bake for 50 – 60 minutes or until cake bounces bake when pressed in the center.
