We are always on the hunt for easy and delicious recipes to share. When Wendy from Wendy’s Kitchen Table fame told us about this old fashioned cake, to say we were excited was an understatement!
In fact, we couldn’t wait to let you know about it! Wendy refers to it as the 1+1+1+1 Cake. It’s literally 4 ingredients, all one cup each!
Wendy likens it to the Great Depression Cake and says that it is so incredibly light and moist. You can ice it using lemon or passionfruit and it’s great with a cream cheese frosting too. She also says it’s fail proof! According to Wendy, a 5 yo could make this cake! The bottom line is quite simply, you can’t go wrong!

Coconut Loaf Cake Ingredients
- 1 cup caster sugar
- 1 cup coconut milk
- 1 cup desiccated coconut
- 1 cup self-raising flour

Wendy’s Hot Kitchen Tip
If you don’t have Caster Sugar, simply put your regular Sugar in your food processor for a quick blitz. This will result in the fine consistency that is synonymous with Caster Sugar.
- Preheat oven to 180˚ C. Spray and line a loaf pan with baking paper.
- Place all ingredients in a bowl. Mix until combined.
- Spoon into loaf pan.
- Bake for 35 minutes.
