Wendy likens it to the Great Depression Cake and says that it is so incredibly light and moist. You can ice it using lemon or passionfruit and it’s great with a cream cheese frosting too.

Coconut Loaf Cake With Icing Ingredients

- One cup of Caster Sugar
- 1 Cup Coconut Milk
- A Cup Desiccated Coconut
- 1 Cup Self-Raising Flour
Wendy’s Kitchen Tip
If you don’t have Caster Sugar, simply put your regular Sugar in your food processor for a quick blitz. This will result in the fine consistency that is synonymous with Caster Sugar.

Coconut Cake Instructions

Preheat oven to 180˚C (360F). Spray and line a loaf pan with baking paper.
Place all ingredients in a bowl. Mix until combined.
Spoon into a loaf pan. Bake for 35 minutes or until golden brown.

How To Make Icing
Wendy suggests that you can brush your cake with a knob of butter and then sprinkle it with coconut. You can also create a cream cheese icing and add in some passionfruit pulp.
