Coconut Slice Recipe Ingredients
- 1 cup Self-Raising flour
- Pinch of salt
- ¾ cup caster sugar
- 1 cup desiccated coconut
- 125g (4.4oz) butter, melted
- 2 eggs, lightly beaten
- ½ cup milk
- 1 teaspoon vanilla

Coconut Slice Icing
- 1 1/3 cups icing sugar
- 20g (.07) butter, softened
- 1 tablespoon boiling water
- 1 drop pink food coloring
- 2 tablespoons desiccated coconut

Coconut Slice Recipe Instructions
Pre-heat oven to 180ËšC (356F) /160ËšC (140F) fan-forced.
Grease and line a rectangular slice pan.
Combine flour, salt, sugar, coconut and butter in a bowl. Add eggs, milk, and vanilla. Spread into prepared pan. Bake for 20-25 minutes or until golden and top is firm to touch.
How To Make Icing Sift icing sugar into a bowl. Add butter. Stir to combine. Stir in boiling water and mix. Tint icing pink with food coloring. Spread icing over slice and sprinkle with coconut.
