You also only need a handful of items that are to be hanging out in your pantry. These cookies are utterly addictive, so be warned, you might like to double up!
Cornflake Cookies Ingredients

Yields 13 cookies
- 125 grams (1 cup) unsalted butter
- 1/4 cup sugar
- 1 large egg
- 2/3 cup sultanas
- 1 cup self-raising flour
- 1/4 tsp cinnamon
- 2 cups lightly crushed cornflakes.
Optional: pecan nuts and choc chips are other toppings that can be used or substituted with this cookie recipe.

Cornflake Cookies Recipe Instructions

Lightly crush cornflakes in a Ziploc bag using a rolling pin.
Add to a bowl and set aside.
To a bowl add the unsalted butter and sugar, and beat until smooth and creamy
Next, add the egg and continue to mix thoroughly.
Fold in the sifted self-raising flour, sultanas, and cinnamon until well combined.

Dip a teaspoon full of the cookie mixture into the cornflakes.
Place on a baking tray lined with parchment.
Repeat the process until all the mixture is used up.
Bake cornflake cookies in a moderate oven of 150c/300f for 20 minutes.
