It’s so moist and delicious and everyone will love them. This sweet treat is perfect with a cuppa or afternoon tea. They are also quick and easy to make. If you loved his Carrot Cake Cookies with cream cheese frosting, this is another to add to your must make list.

Cream Cheese Pumpkin Bars Recipe Ingredients

  • 1 stick of butter, 1/2 cup (113g)
  • 1 cup of brown sugar
  • 2 cups of all-purpose flour
  • One Egg
  • 1 cup of pumpkin puree’
  • a few drops of vanilla extract

Cream Cheese Frosting Ingredients

  • 8oz (250g) cream cheese
  • 1/2 cup white granulated sugar
  • one egg
  • few drops of vanilla extract

Cream Cheese Pumpkin Bars Instructions

Add a stick of butter to a mixing bowl and a cup of brown sugar. Mix until well creamed. Add an egg and a cup of pumpkin puree’, a few drops of vanilla, and mix again. If it curdles, don’t worry.

In a separate bowl add 2 cups of all-purpose flour plus a teaspoon of pumpkin spice, baking soda, and  1/2 teaspoon cinnamon and1/2 teaspoon salt.

Mix up your ingredients with a whisk. Add dry mixture half at a time to wet mixture. Don’t over mix, Use a spatula.

Grease an 8×8 inch pan with baking spray, add mixture to the pan and spread evenly.

Now make your cream cheese filling. Add cream cheese to bowl and beat until creamy.

Add 1/4 cup white granulated sugar, one egg, add a few drops of vanilla extract. Beat up until the mixture is nice and creamy.

Add the cream cheese frosting mixture over the pumpkin base.

Place in a 350F/177C preheated oven for 35-40 minutes.

Remove from the oven and let cool on wire rack. Cut in squares and enjoy!
