  • 2¾ cups unbleached AP flour
  • ⅛ tsp salt
  • ½ tsp baking soda
  • 2 cups water
  • 9½ tbsp butter
  • 6 large eggs

Puff Pastry Custard

  • 1 cup sugar
  • ½ cup flour
  • ¼ tsp salt
  • 3 cups whole milk
  • 4 egg yolks
  • 3 tbsp unsalted butter
  • 1½ tsp vanilla extract
  • 1 tbsp rum

Mousseline Cream Puffs Recipe

Over on Eugenie’s Kitchen, this Mousseline Cream Puffs Recipe has been a Pinterest smash and she says that it is fancier than the usual Pastry Cream. All we know is if the photos are anything to go by, they look incredible!

  • 2 cups milk (480ml)
  • 4 egg yolks
  • cup + 1 tablespoon granulated sugar (80g)
