WHOot favorite Vanya from VJ Cooks is sharing another sweet treat with us today! Her Crispy Peanut Slice With Chocolate or Caramel Frosting has been a smash and it’s easy to see why.

We love the fact that there are a couple of frosting choices as it allows you to mix it up a bit. This treat is sweet, crunchy and packed with peanuts.

Crispy Peanut Slice Recipe Ingredients

Vanya says that these squares serve perfect sliced in either bite-sized pieces or bigger squares. Just be sure nobody has any peanut allergies if you’re planning to share.

  • 7 oz (200g) butter
  • 1/2 cup sugar
  • 2 Tbsp golden syrup
  • 1.5 cups flour
  • 1 tsp baking powder
  • 1 cup roasted peanuts, chopped
  • 1.5 cups of rice bubbles/rice crisp cereal

Chocolate Frosting Recipe Ingredients

  • 1.8oz (50g) butter
  • 1.5 cups icing sugar
  • 3 Tbsp cocoa

Caramel Frosting Recipe Ingredients

  • 1.8oz (50g) butter
  • 1.5 cups icing sugar
  • 2 Tbsp golden syrup

Crispy Peanut Slice With Chocolate Or Caramel

Preheat oven to 325°F/170°C fan bake/convection.

Melt together butter, sugar and golden syrup in the microwave or on the stove.

Add flour, baking powder, chopped peanuts, and rice bubbles to a bowl then pour in the melted butter mix. Stir all together to combine and then press the mixture into a lined tray.

Bake for 25 minutes, then spread the chocolate or caramel icing over the warm base.

Icing Recipes

Chocolate Icing: Melt butter and then whisk together with icing sugar and cocoa until smooth.

Caramel icing: Melt butter and golden syrup together (in the microwave or stovetop) then whisk together with icing sugar until smooth.
