via Kitchens Corner with Catherine

Add butter to the pan, melt. Next, add peaches and brown sugar stirring gently.

Simmer on medium heat until the peaches caramelize. Your peaches should take on a golden brown appearance as shown in the video.

Set aside to cool down. Add self-rising flour, salt, cinnamon powder, sugar and combine.

Add milk, vanilla extract, whisk until you have a nice smooth consistency.

To an 8×8 square pan (or big loaf pan) add melted butter to a baking dish, pour your batter in and add your peaches without mixing.

Pop your dish into a pre-heated oven of 350F (180C) for 45 to 50 minutes

Flambe Instructions

This next step is optional, but it is worth the extra effort!

To a pan add butter. Next add your peach wedges.

Let them cook until tender using medium heat and stirring occasionally.

Sprinkle the brown sugar over the peaches, let it caramelise. Pour over the liquor of your choice,  Catherine used Cognac.

Stir for 30-60 seconds then set aside. Be sure that your heat is not too high.

Remove Peach Cobbler from Oven and arrange peach wedges over the top. Drizzle the syrup over the peaches. Enjoy.
