- 2 eggs
- Italian breadcrumbs
- Oil, for frying

Eggplant Parmesan Lasagna Recipe Directions
Slice your eggplant in 1/4 to 1/2 inch slices.
Create a Dredging station that has one bowl of flour, a bowl of 2 whisked eggs, and a bowl of Italian breadcrumbs.
Dredge sliced eggplant in flour, then egg mixture and cover in Italian breadcrumbs.
Set aside on wire rack.
Once breaded up, fry for a couple of minutes in oil until golden brown.
Remove from oil and place on wire rack.
in a casserole dish, place marinara meatless sauce on the base.
Place eggplant on marinara sauce, you can overlap.
Layer with marinara sauce over eggplant, cover with shredded mozzarella and parmesan cheese. Garnish with basil leaves.
Place into 375F/190C Oven for 25-30 minutes until golden brown.
