250 grams (9oz) white firm-fleshed, boneless fish fillets. Basa was used in video but you can sub as you like.
60 grams (2oz) Panko breadcrumbs.
50 grams (1.7oz) of custard powder. Cheeky Richo used the generic brand because it is not highly flavored*.
(*More expensive brands tend to impart a stronger vanilla flavor, and it may not be to your liking.)
Enough cold water to mix the custard powder to a paste similar in consistency to pouring cream.

How To Make Homemae Fish Fingers Instructions
Mix the custard powder with water until combined.
Cut fish fillets into fairly even fingers, about 3. The size should be about 80mm x 30 mm or 3″ x 1″.
Pat dry with a paper towel. Dip fingers into custard powder and then into Panko Breadcrumbs, pressing on well. Heat oil to 190 degrees, 375F.
When the oil has reached cooking temperature, carefully lower fingers into oil for 3-4 minutes until crispy golden brown all over.
Drain and place on an absorbent towel to soak up excess oil. Serve straight away with fries, salt flakes and lemon.
