Another handy chart that is ideal to keep on hand is this Gluten Fre Conversion Chart. This shows you the amount of flour to substitute with traditional wheat flours in your baking recipes.

For example if the recipe calls for 1 cup of wheat flour, you will substitute with 1/2 a cup of rice flour, 3 tablespoons of potato starch, 1 tablespoon of Tapioca Starch, or 1/2 a teaspoon of Xantham Gum.
