This Lamington Recipe is so easy and delicious and we just know you are going to love it. This is a CWA (Country Women’s Association) staple just like the jelly cakes and 3 ingredient fruit cake.

The best part about this recipe is that you can use a store-bought sponge cake if you are short on time or use our 3 ingredient sponge cake recipe.

Lamington Recipe Ingredients

  • 4 cups desiccated coconut
  • 1 vanilla sponge cake (cut in two halves)
  • 2 cups icing sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 3 Tablespoons water to mix icing

How To Make Easy Lamington Recipe

Lamingtons can be made a number of ways including the addition of jam or cream filling or both. You simply slice your sponge cake and sandwich the ingredients between 2 pieces of sponge cake.

You will then dunk your lamington cake into the chocolate and cover fully using forks to hold it stable. Don’t use your fingers as it can become messy. You will then finish off by covering in coconut.

Another tip is to freeze your sponge cake slightly prior to dipping in the chocolate. Whilst this is not necessary, some have suggested it holds together nicely.
