Biscuits Ingredients

  • 175g (6oz) unsalted butter, softened
  • ¼ cup sifted icing sugar
  • 1 tsp. vanilla extract
  • 1 cup plain flour, sifted
  • 1/4 cup cornflour

Lemon Filling Ingredients

  • 60g (2.2oz) unsalted butter, softened
  • 1 cup icing sugar, sifted
  • 2 tsp. lemon juice
  • 2 tsp. grated lemon rind

How To Make Lemon Melting Moments Cookies Recipe

Preheat your oven to 180 degrees Celcius (350F).

Lightly grease a baking tray and line it with baking paper.

Beat together butter, icing sugar, and vanilla extract for 5 minutes or so until a creamy texture is achieved.

Add the plain flour and cornflour until dough is achieved.

Use a tablespoon to scoop out a small amount of dough and roll it into balls and place onto a baking tray about 2cm apart.

On a lightly floured board use the base of a fork to flatten the dough down to create a cookie shape.

Pop in the oven for 10 minutes until lightly golden around the edges.

Now it’s time to make the Lemon Filling. Beat your butter, icing sugar, lemon rind, and lemon juice together for 5 minutes.

Transfer your cookies onto a wire rack so they can cool completely.

Add lemon icing and sandwich them together. Enjoy.
