Wendy from Wendy’s Kitchen Table is showing us another one of her favorites today, this easy and delicious Marshmallow Jam slice.

A Weetabix and coconut crust is topped with jam and ooey gooey marshmallows. There’s a reason that it’s a total crowd favorite.

Marshmallow Jam Slice Ingredients

  • 1/3 cup brown sugar
  • 1 cup desiccated coconut
  • 3 Weetabix, crushed
  • 1 cup plain flour
  • 2/3 cup butter, melted
  • 2/3 cup strawberry jam
  • 370g (13oz) marshmallows

Marshmallow Jam Slice Instructions

Preheat oven to 180˚C (360F) or 160˚C fan forced (320F). Grease and line an 8 x 12-inch baking pan.

In a bowl combine flour, Weetabix, sugar, and coconut. Make a well in the center.

Add melted butter to the dry ingredients and mix until well combined.

Tip into pan and press into tin using the back of a spoon. Bake for 25-30 minutes.

While the slice base is warm spread with jam. Arrange the marshmallows on top and return to the oven for 7 mins until just softened. Cool slice in pan then cut into squares.
