We’re excited to share this Best Mint Cheesecake Recipe with you today. Whilst it had been in circulation on Facebook, we needed someone to verify the recipe for us.

Mint Aero Cheesecake Recipe Ingredients
Gail made this recipe a couple of times before she gave it the tick of perfection. She even shared with her neighbor who gave it double thumbs up! Here’s what you will need.
- 100g (3.5oz) plain sweet biscuits
- 100g (3.5oz) Choc Ripple (or Oreo) Biscuits
- 100g (3.5oz) butter, melted
- 3 teaspoons powdered gelatine
- 2 Tablespoons boiling water
- 500g (18oz) cream cheese, softened
- 2/3 cups caster sugar
- 2 teaspoons vanilla bean paste or vanilla essence
- Peppermint Essence
- Green food coloring
- 300 ml (10oz) thickened cream, whipped

Decorations For Your Aero Cheesecake
Gail has used a few additional ingredients to give her Mint Aero Cheesecake an extra special touch. She used:
- Extra whipped cream
- Choice of 1 peppermint aero bar
- 1 peppermint crisp bar or grated chocolate

Best Mint Aero Cheesecake Recipe Instructions
Grease and line a 17cm x 28cm Slice Pan with baking paper. Using a food processor, pulse biscuits until they resemble fine crumbs.
Add butter. Mix until combined. Press the biscuit mixture over the base of your prepared pan. Refrigerate for 10 minutes or until chilled.
Sprinkle gelatine over boiling water in a heatproof bowl. Whisk with a fork until dissolved. Set aside to cool.

Using an electric mixer, beat cream cheese, sugar and vanilla until smooth and creamy.
Add in 1/2 teaspoon green coloring and 1 teaspoon peppermint flavoring.
Give a quick whip to combine. Taste and add more peppermint if desired. You can also add more food coloring if you wish a brighter color.
Gradually beat dissolved gelatine into the cream cheese mix until combined. Fold in whipped cream.
Pour mixture into prepared pan, leveling top with a spatula. Cover and refrigerate until set.
Remove the slice from the tray.
Decorate with extra whipped cream, and sprinkle over your choice of crushed peppermint aero bar, peppermint crisp or grated chocolate.
