Orange And Date Muffins Recipe Ingredients

  • 1 orange
  • 1 cup sugar
  • 1 large egg
  • ½ cup milk
  • 100g (3.5 oz) butter, melted
  • 1 cup plain flour
  • ½ cup almond meal
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup dates, halved and soaked in boiling water, drained

Orange Date Muffins Cream Cheese Frosting

  • 125g (4.4 oz) cream cheese
  • 1 ½ cups icing sugar
  • Zest of an orange
  • 2 tablespoons orange juice
  • Toasted almonds and orange zest to decorate

Orange And Date Muffins Recipe Instructions

Preheat oven to 200˚C (390c) or 180˚C fan-forced (356F)

Grease a 12-hole medium muffin pan.

Soak halved dates in boiling hot water and set aside.

Cut unpeeled orange into quarters, place in a food processor with sugar and process until orange is smooth.

Add egg, milk and melted butter and process until combined. Add dry ingredients and pulse until just combined.

Drain water from dates and fold dates through the mixture.

Spoon mixture into muffin pans and bake for 12-14 minutes or until golden and springy when lightly pressed.

Cool on a rack. Then ice with cream cheese frosting if desired.

Cream Cheese Frosting Instructions

Put all ingredients into a bowl and mix with electric beaters until smooth and spread on muffins.
