Wash and dry your strawberries thoroughly. Take a strawberry and with a small knife, cut close to the stem and remove. 1/3 down cut through and keep the top and remainder of berry.
Now cut a circle out of the center of the base. Set aside with toppers.
Next, make the filling. Take a full block or 8oz of softened cream cheese.
Add a cup of sugar and slowly stir in about 1/4 of the sugar at a time and mix until well combined.
Add 1/2 cup of shredded coconut and a teaspoon of almond extract and mix until smooth.
Using a Ziplock Bag. Scoop a little bit of the filling into the corner of the bag, push it down to the corner. Snip the corner of the bag and you’re ready to pipe.

Take the bottom of the strawberry and in the opening squeeze some of the filling into the center. Take the topper and push it towards the back at an angle. This becomes Santas beard.
Add chocolate sprinkles for Santa’s eyes and mouth. Using your piping tip, pipe buttons onto the front of the berry suit and a pom-pom on top of Santa’s Hat.
Serve on a white plate and sprinkle with shredded coconut to look like snow.
