Stuffed Mashed Potato Balls Ingredients

  • 3 Large Potatoes of your choice
  • 1/2 kilo lean ground mince
  • diced bell peppers
  • chopped garlic
  • chopped onion
  • diced tomatoes
  • salt and pepper
  • 1 Tablespoon Oregano
  • 1/2 cup of corn
  • 3 Eggs
  • Parsley for garnish
  • Oil for frying

How To Make Stuffed Mashed Potato Bombs

Boil 3 large potatoes. Fry 1/2 a kilo of lean ground beef until golden brown.

Add in diced bell peppers, chopped garlic, chopped onion, diced tomatoes and season with salt and pepper.

Add in 1 Tablespoon of Oregano. and 1/2 a cup of corn. Fry until tender.

When the potatoes are fork-tender, drain, season with salt and pepper, and mash them up.

Using a large ice cream scoop put two scoops into the palm of your hand and shape them into a ball.

Place on a sheet of plastic wrap. Cover with another sheet of wrap on top and flatten with your hand into a 4×4 circle.

Scoop up a couple of tablespoons of mixture. Place in the center of the mashed flattened mashed potato. Gather up the edges with plastic wrap and then pull together.

Shape into a ball and pop on a plate.

Crack 3 eggs and whisk them up. Add 2 tablespoons of flour until well combined. Place balls into the mixture until well coated.

Have a pan of oil on standby set to 350F, 177C. Place balls in the oil and roll around for a few minutes until golden brown.

Plate them up and garnish them with parsley.
