Pasta night and Taco night are about to get together and it’s going to be a smash! Gail’s Taco Lasagna Recipe is sure to please everyone’s palate.

This family favorite will feed a crowd on the fly and it’s perfect for a weeknight meal or for when friends drop in.

Taco Lasagna Recipe Ingredients

Here’s what you will need.

  • 18oz (500g) minced beef
  • 1 packet medium-sized tortilla wraps
  • 1 onion diced
  • 1 packet taco seasoning
  • 1 can/tin diced tomatoes
  • 1/2 Cup Water
  • A handful of baby spinach leaves
  • 1/2 cup frozen corn kernels

Taco Cheese Sauce Ingredients

  • 1-2 tbsp Plain flour
  • 1 tbsp butter or margarine
  • 12oz (350ml) of milk
  • Salt and pepper to season
  • 1 Cup grated 3 cheese mix

Taco Lasagna Toppings

  • Finely sliced iceberg lettuce
  • 1/2 a red capsicum sliced and diced
  • 1 deseeded and finely sliced red chili
  • Finely sliced Green Spring Onions
  • Chopped fresh coriander
  • Sour cream

Taco Lasagna Recipe Instructions

Heat a little oil in a pan and fry the meat until it is browned. Add the onion and cook until transparent, then mix through Taco Seasoning.

Add canned/tinned tomatoes and 1/2 cup of water, then lower to a simmer, stirring occasionally.

Meanwhile, add in the flour and butter to a saucepan and cook for 2 mins to cook out the flour.

Gradually add in milk, continually stirring so lumps don’t form.

Stir until mixture begins to thicken. If the mixture is too thick then add in more milk.

Season with salt and pepper.

Add cheese and mix through to melt, then remove from heat.

Remove meat mixture from heat and begin to assemble.

Using a square baking dish, line bottom with tortilla wraps, overlapping where necessary.

Spoon in 1/3 mixture, top with cheese sauce.

Repeat these 3 layers another 2 times. Finishing with a cheese sauce layer.

Sprinkle with extra 3 cheese mix and bake at 350F/180C for 30 minutes until top is golden

Remove from oven and allow to rest 10-15 minutes.

Serve and top with a mix of lettuce, capsicum, chili, coriander, and spring onions, add a good dollop of sour cream to the top and enjoy!
