How To Make White Choc Lemon Truffles
Break up your white chocolate and place the pieces in a bowl.
Add in the heavy cream, butter, lemon extract, and microwave until melted.
You can also use a double boiler or bowl over a boiling saucepan for this step. Once melted, mix the ingredients well.
Using clean hands, shape the mixture in your palms, and roll it into small balls.
Place balls on a tray and pop them into your freezer until they firm up sufficiently.
Place pieces of white chocolate in a bowl, add oil, and microwave until the mixture is melted. Mix the ingredients well.
If you would like to enhance the color, you can add a couple of drops of yellow food coloring but this is optional.
Dip each ball in the chocolate and oil mixture. Roll around gently and cover using 2 forks.
Remove from mixture and place back on the tray.
Sprinkle each ball generously with lemon zest and pop in the freezer for 2 hours. Enjoy!
